How do I tell males from females?
deoends on what type/species of fish you are talking about.
It depends on the species but a rule of thumb for most is that the dominant males will be colourful and the females normally pretty drab. Even if you have a few males together, the dominant one will be colourful and the subdominants will be drab looking too. So very hard to tell usually until adult too.

With african cichlids there are only a few species that you can tell just by looking at them. You will have to vent most of them. Try googling "venting cichlids" that should explain.
